WHere is a simplified interpretation of a beverage found on a new menu. This is a party-sized prepared mix that is packed with the flavours of the holiday season, making it perfect for a festive gathering. Reserve the remaining syrup you can use for brunch beverages, puddings, or for more rounds of this cocktail.

Serves 10 guests
For the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Drink (yields 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Method
For the Syrup: Combine all the items into a saucepan, heat until it reaches a light boil, mixing until the sugar dissolves. Then, take off the stove allowing it to cool fully. Pour to a sterilised bottle, seal and store in the refrigerator, where it will keep for up to four weeks.
To make Cocktail Base: Mix the specified liquid ingredients into a big jug, allow it to infuse for 60 minutes, then filter it , ideally through cheesecloth, to ensure it's fully clarified.
For serving: Measure 85ml from the cocktail base into a stirring glass packed with ice, and agitate carefully for one minute to chill. Filter to a cold coupe glass or a similar vessel, decorate with the cranberries and complete it by giving it a brief mist of the essential oil over the top.
